VARIETALS: Grasparossa, Salamino, Maestri, Malbo Gentile

VINEYARDS: Matildic hills in the province of Reggio Emilia,highly suitable area, located on silt-clay soils.

HARVEST/VINIFICATION: Grapes are selected and harvested by hand. Cryo-maceration on the skins for a few days, with its yeasts at controlled temperature. In the following February, it is bottled, where the second fermentation takes place, at the end of which the wine becomes sparkling.

TASTING NOTES: Textbook airy mousse with persistent bubbles. Very intense red color, with purple reflections. Ripe, intense with developed aromas of red fruits and ripe grapes. On the palate: dry, fresh and agreeable mouthfeel, good structure and harmonious with smooth tannins. Food pairing: traditional first and second courses of Emilian cuisine, perfect with red meats and sausages.
