VINEYARDS: On the hills in the province of Reggio Emilia, with clay, sand and slime suited for grape production.
HARVEST/VINIFICATION: Grape harvest by hand following selection of suitable grapes. Grape pressing with special equipment, followed by soft second pressing then fermentation with select yeasts at controlled temperature. The foam is taken at low temperature in the autoclave.
TASTING NOTES: Typical airy mousse, with significant bubbles. Very fragrant, intense nose of red fruits from fully ripened grapes. On the palate: fresh, soft and delicate flavours. Food pairing: Ideal for aperitifs, appetizers and first courses.
Serving temperature: 10°-12C° Cultivation method: Organic – Biodynamic per DEMETER protocol. Sugar: 9.00 g/L
