PETIT CHABLIS 2018
The grapes for this Petit Chablis were sustainably grown on 3.5 hectares of Portlandian soils composed of harder, compact , fine-grained limestone tinged with a bit of clay. The soil level below is full of marine sediments and small fossilized oyster shells. The vines themselves are over 25 years old. Traditional vinification in thermo regulated vats: alcoholic fermentation, malolactic fermentation, racking, and fining. The wine is left on the lees for 6 to 12 months. Lightly filtered and bottled at the domaine. If pairing with French cuisine: enjoy as an apéritif with gougères or with creamy main course dishes such as chicken in cream sauce.
