VINEYARDS: Matildic hills in the province of Reggio Emilia,highly suitable area, located on silt-clay soils.

HARVEST/VINIFICATION: Grapes are selected by hand. Skin maceration for a few days with appropriate yeasts at controlled temperature. The foam is taken at low temperature in the autoclave.

TASTING NOTES: Textbook airy mousse with significant bubbles. Deep red color, with purple reflections. Very fragrant, with intense nose of red fruits and mature grapes. On the palate: well-rounded, fresh and delicate, with excellent structure, harmonious with smooth tannins. Food pairing: traditional courses of Emilian cuisine, perfect with red meats and sausages. 

Serving temperature: 10°-12C°  Cultivation method: Organic – Biodynamic per DEMETER protocol.  Sugar: 10.00 g/L
